Welcome spring! Or at least its trying around here! Hopefully you survived the winter and are enjoying a bit of sunshine now!
LET’S TAKE A LOOK AT THIS WEEK’S DINNER MENU…
Tuesday –Cauliflower Nuggets
These little guys taste great! They are even more fantastic dipped into BBQ sauce! Be sure to pair them with a side or a salad! I would suggest adding in a sweet treat! Possibly some cookies! Who doesn’t need a cookie, or two? Right?
Our family loves risotto! We love playing with veggies and fruits to make our risotto different every time we eat it! This time around we used peas! Remember when you were little and peas weren’t very fun? Toss them with some yummy rice and cheese and you are in luck! We also paired this with cornbread, which is an unsuspectly good addition!
Thursday– Crockpot Chili
We love chili at our house, no matter what time of year it is! This recipe is incredibly easy and incredibly yummy! Its a dump the items into the crockpot and come back for a YUMMY meal! We topped our chili with vegan sourcream and some diced scallions! This chili pairs great with some fresh rolls!
Our family loves pizza; we love to create a pizza based upon the available fresh and local ingredients! For this pizza we were able to purchase many of the items at our local farmers market! Sometimes simple just tastes better! You can use your favorite pizza crust or make your own. I like to use Better Batter Flour (gluten free) and this dough recipe.
