Welcome to 2015! Happy Gluten Free New Year! I always like to start off my year with some freezer meals. What I like to do is just cook a double or triple batch of my favorite recipes and then freeze them. This is easier for my family schedule rather than spending an entire day in the kitchen cooking. Below are some of my favorite freezer meal recipes. As always, be sure to double check brands and ingredient labels to make sure they are gluten free!
Monday – Refried Bean and Cheese Burritos
You can use corn tortillas or make your own tortillas using Better Batter! Its easier than you think! These freeze up great!
Tuesday – Kale and White Bean Soup
This soup is truly amazing and fills you up! Be sure to serve with some homemade rolls using your Better Batter flour!
Wednesday- Tempeh Tacos
These tacos were a hit at my house! I made a double batch and froze the tempeh portion. So all I need next time are the shells and toppings! Be sure to double check to make sure your tempeh is gfree!
Thursday- Sweet Vegetarian Chili
This chili has a wonderful sweetness to it that can be adjusted to your taste! It freezes well and pairs great with cornbread!
I love serving Lentil Joes on homemade bread! Top with some pickles and cheese and I am in heaven! The joes freeze great as well!
