What’s Cooking? 9/3/2012


Well “hello” there my friends and welcome to another fun week with  Vegetarian Mamma!  It is crazy to me that we are already in September?  What happened?  This summer has flown by!  Remember when we started our Gluten Free Menu journey back in July?  Wow, we’ve talked about a lot of recipes since then!  I hope that you’ve found some new favorites!  As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!

LET’S TAKE A LOOK AT THIS WEEK’S DINNER MENU:

Monday – Corn Risotto served with Pan Fried Zucchini
Let me tell you that this girl (me) loves Italian food.  I love risotto.  I often think that I was really meant to be Italian. :)  But having light color hair and eyes, I just don’t quite look the part!  But I can certainly eat the part!  This homemade risotto is simple and sure to please your palette with some fresh in season corn!  Use up some of your garden zucchini by making some pan friend zucchini.
This week for our breakfast for dinner, we are dressing up are plain scrambled eggs.  We are giving them some life with some yummy sweet bell peppers.  We used lots of different color peppers to give this dish a more visual appeal!  Serve with toasted gluten free bread.
This is a great way to use some lingering veggies in your garden!  It makes an easy sauce packed with great taste!  Serve over a batch of homemade pasta and its a WIN WIN!
I am switching it up a bit this week and having our sandwich meal today because tomorrow I want pizza!  As always, feel free to rearrange the menu plan as it fits your tastes and your families schedule!  So tonight we are going to have a simple English Muffin sammy.  I like to dress mine up with some cheese (typically vegan), vegan mayo, mustard and some lettuce.  I’d serve this yummy sammy with a side of chips!
Its FRIDAY!  We are ending our week by having some easy peasy pizza!  This week we will be using olives and fresh spinach!  Don’t worry about buying your pizza crusts, we are going to make them using an easy recipe!
