has cooking up this week! Have you noticed the leaves on the trees are starting to change to fall colors? Many trees here in Ohio are losing their leaves already! Fall is coming!
As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer! We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!
LET’S TAKE A LOOK AT THIS WEEK’S DINNER MENU:
Well its official, summer vacation is over at our house. Our little preschooler starts his second year of preschool today. So its going to be a busy day at our house! I’ve planned a super easy meal! I am serving Mexican Rice Bowls with Mason Jar Desserts. You can actually make the desserts the night before if you like. We have done that and they kept just fine in the fridge!
This week for our breakfast for dinner, we are serving Blueberry Peach Muffins and scrambled eggs! The muffins are a great quick meal! Whip up a double batch and have some for breakfast this week! My kids never tire of muffins! They are a favorite in our house!
Since its a busy week, we are keeping dinner simple this week! My family loves grilled cheese! Get out your homemade gluten free bread, that you made using Better Batter flour and whip up a good ol’ fashioned grilled cheese! Remember, they can easily be made with dairy or non dairy cheeses and butter! Serve your grilled cheese with some zucchini fries! Yes, you heard me right! They are tasty, especially with dipping sauce!
To me nothing smells better than some veggies roasted in the oven! Tonight we are going to have roasted red pepper and spinach pasta! The veggies in this dish pack it full of flavor!
So whose excited that we made it to Friday? Me, I am! One week of school, under our belts! We are keeping with our Friday theme and keeping it simple! Enjoy some lemon chickpea sammys served with fresh fruit!
