Hello from Vegetarian Mamma
! Can you believe its August already? Soon it will be time for the kids to go back to school. How did the summer go so fast? Yikes! I’ve created a meal plan this week to help keep meal time stress free so you can enjoy what’s left of summer! As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer! We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!
LET’S TAKE A LOOK AT THIS WEEK’S DINNER MENU:
I thought we’d start our week with some easy stir fry noodles! This dish is best in a wok but if you don’t have one, no worries! You can use a skillet at a higher heat. I love the veggies in this dish. I paired it with a super easy peach cobbler recipe. You will be pretty full from dinner so you can pop this in the oven to bake while you are eating. Then it can be enjoyed later in the evening! Perhaps a yummy treat for after the kids are in bed? Of course, be sure to share some with the kids tomorrow.
Welcome to breakfast for dinner night! This is a fun twist! These open face sandwiches are a sweet breakfast treat! My family has fun creating our own. We love to add our favorite fruits to these sammys such as kiwi and blueberries. What will you add to your sandwich?
How is the sweet corn growing where you live? The corn wasn’t looking to good around here until our recent week of storms. The storms caused lots of problems but it did bring much needed rain to the crops. Since then our corn has been looking much better and tasting great! This chowder is best when using fresh corn right from the cob! Its easy and tastes great!
I wanted to add a rice dish to this week’s menu and this one fits our needs perfectly! There are lots of veggies and you can easily sub out the tofu for a meat of your choice! You can also switch around the veggies if you like! Don’t like carrots? Add in another veggie of your choice! The meal tonight is complimented by Egg Rolls! YUM! There is nothing better then a warm crunchy egg roll!
TGIF! I hope your survived the week! Tonight we are switching gears and making homemade pizzas! Making pizza dough is easy when you use the above recipe
and Better Batter’s Gluten Free Flour! Its super quick and easy to create your dough! Let your creative juices flow and design your own pizza toppings! Let this dinner be carefree; everybody’s pizza can be different! Instead of buying a jar of pizza sauce just use tomato sauce. Its cheaper and just as good!
