LET’S TAKE A LOOK AT THIS WEEK’S DINNER MENU:
My lone zucchini plant in my garden has been very good to us this year. Somehow its given us the perfect amount of zucchini. Not too much, not too little, just perfect! Thanks little zucchini plant! We created an easy zucchini cake recipe that uses 3 different spices. We flavored our cakes separately with curry, Italian seasoning and poultry seasoning (don’t worry, its actually vegan!). Serve these cakes warm with your favorite side salad.
For the longest time I have wanted to try tofu scramble. I’ve read lots of recipes for it and I have seen it on the hot bar at Whole Foods, but I had never tried it. I found this recipe and it seemed to have the ZIP that I thought tofu scramble might need
I was right! It was pretty good! So if you are like me, get the courage up and scramble your tofu! Serve this scramble with some toasted gluten free bread!
If you are a carrot or apple lover, this soup is for you! You will have leftovers of this soup so save it for easy lunches for the rest of the week! We are balancing out the healthy soup with a little sweetness from double chocolate brownies! I promise you won’t be disappointed with these brownies. YUMMO!
Tomatoes are in full force this time of year and I try to include them in our meal plans as much as possible! I love the colors of the tomatoes in this recipe, though the recipe would be just fine with all red tomatoes! There is something to be said for the smell of tomatoes roasting in your oven! YUM! Pair the roasted goodness with some fresh gluten free pasta and we are in business!
Happy Friday! If you kids started back to school this week, I hope it all went well! We are keeping it simple this Friday with our Lentil Sloppy Joes! I love to serve our sammy’s open face. I like to see what I am eating and not be overwhelmed by bread. I love the “comfort food” feel I get from this sloppy joe recipe! I hope you feel the same! I’d pair this sammy with your favorite side salad!
