What’s Cooking? 8/13/12


Happy Birthday to me, Happy Birthday to me, Happy Birthday  Vegetarian Mamma, Happy Birthday to me! Can you tell that I am slightly excited?  YIPPEE! Birthdays only come once a year so its time to celebrate!  Thanks for stopping by this week to check out some of my favorite meals, in honor of my birthday!  As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!

LET’S TAKE A LOOK AT THIS WEEK’S DINNER MENU:

I love the flavor in this spanish  rice dish! I love the pairing of tofu and beans AND  the smoked paprika is “icing on the cake”!  Speaking of cake…since its my birthday week and all… let’s whip up a batch of cupcakes using Better Batter’s Yellow Cake Mix!  Come on, do it for me!  Let’s celebrate!
 
Tuesday Pumpkin Chocolate Chip Muffins served with freshly scrambled eggs
Welcome to ‘Brinner” as Gigi from Gluten Free Gigi and her family call it!  Love that name!  I can’t say enough about these muffins!  They were a stand by before we entered the gluten free world and they have made the transition with us!  They are easy muffins to whip up and the recipe makes 2 dozen!  Honestly, they are so super good that we can eat most of them in a week, but they do freeze well too!  So save a little of your waist line and pop 1 dozen in the freezer :) The sugar in the recipe can be reduced.  The muffins are still as sweet, but have a lower calorie count!  Be sure to pair with some freshly scrambled eggs to complete your Brinner!
 
WednesdayChili Mac served with Ritz Schmitz Crackers
Fall is my favorite time of year!  Whoa, I do know that its not quite fall yet, so hear me out!  Fall is my favorite time of year… since I am sharing my favorite recipes with you during my “birthday week,” I wanted to share my favorite fall recipe for Chili Mac. Totally makes sense now, huh?  Its an easy recipe that is sure to please a hungry tummy!  In my book, nothing goes better with chili mac then some crackers!  Making your own crackers is not that hard!  Take a ‘crack’ at these Ritz Schmitz Crackers!
Thursday–  Black Bean Soup served with fresh corn on the cob
I am always talking about different ingredient and flavor combinations.  This week, I want to share how much I love black beans and corn together!  This soup is easy to make and has a rich taste!  Its perfectly complimented with fresh corn on the cob!  You can even add a little corn into the soup if you like!
FridayVegan Tuna Salad on Gluten Free Bread served with a side of kale chips
Yay, we made it through another week!  This Friday we are keeping our meal simple with sandwiches for dinner!  This Vegan Tuna Salad is easy to make and can by made a day or two ahead of time!  The same goes with your bread!  I always make 2-4 loaves of bread, slice them and freeze them.  Then I take out what I need for the day! Have you tried kale chips yet?  It seems to be the trendy food this summer!  They are very tasty and you can  make them ahead of time too!
