What’s Cooking? 7/30/12


Vegetarian Mamma says “What’s Cooking?”  I hope that you enjoyed last week’s menu plan!  If this is your first week here, welcome!  As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!

LET’S TAKE A LOOK AT THIS WEEK’S DINNER MENU:

I love Vegetable Paella because it is so colorful!  It is a great dish that uses some veggies from your garden!  The dish is quite giving, you can add a little more of this or a little more of that, vegetable wise and it will still taste great! I am pairing this yummy veggie dish with some sweet chocolate chip cookies!  Pace yourself with the cookies, so you can have some treats all week long!
 
TuesdayHomemade Baked Doughnut Holes served with freshly scrambled eggs or scrambled tofu
I had long be searching for a recipe for doughnut holes that I didn’t have to fry.  These little baked holes are wonderful!  They are actually quite easy to make!  I was able to make mine gluten free and vegan!   I would suggest doubling or tripling the recipe for 3 or more people.  You will gobble them up!  Pair with scrambled tofu or eggs to complete your breakfast.
 
Oh yummy quinoa, you are my loyal friend. We love to use quinoa in as many recipes as we can!  This is a chili that meat eaters, vegetarians and vegans will enjoy! Quinoa adds some extra protein to this vegetarian chili.  Its full of kidney beans and black beans!
Thursday–  Fresh Balsamic Pasta
I love to make my own homemade gluten free pasta.  It is actually quite easy when you use Better Batter flour and this recipe!  I have ordered a pasta maker so I can make some fun designs!  This recipe has deep flavor from the balsamic vinegar.  Its a bold flavor, but one that I think you’ll enjoy!
FridayMillion Dollar Grilled Cheese and Fancy Pants roasted corn
Don’t let this name scare you, it still simple enough for our “Keeping it Simple” Friday theme.  The grilled cheese is the perfect combination of  three gooey cheeses!  It pairs wonderfully with our fancy pants roasted corn! So this week, celebrate Friday with trying some new cheeses on your grilled cheese!  Who said grilled cheese had to be plain?
