What’s Cooking? 7/23/12


 Vegetarian Mamma says “Hey good looking, what ya got cooking?”  Thanks for coming back for another fun week of recipes!  We are always happy you are here!  Have you shared any of the recipes with your friends?  We’d love to have you share this meal plan on facebook or tweet a message about it! As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!

LET’S TAKE A LOOK AT THIS WEEK’S DINNER MENU:

Monday – Chana Masala
I would have to say that this dish is in my top 5 favorite dishes of all time!  I love it!  We make a double batch to feed two adults, 2 kids and have some left overs!  Trust me, you’ll be sorry if you don’t double this recipe.  Steam some rice, of your choice, to serve along with this dish.
TuesdayStrawberry Rhubarb Chocolate Chip Muffins served with freshly scrambled eggs
These muffins are wonderfully moist and sure to give your  taste buds a sweet treat! As with any fresh fruit muffins, they are super moist and should be eaten within a day or two!  Be sure to pair  these muffins with some freshly scrambled eggs to complete your “breakfast” dinner!
 
Just like last week, I want to introduce you to another tasty soup that reheats well!  This veggie rice soup was even a hit with my kiddos!  The best part is that its easy to prepare and freezes well!  Nothing tastes better with soup then some warm gluten free crescent rolls!  Get your Better Batter All Purpose Flour out to gear up for these awesome crescent rolls!
Thursday–  Lettuce Bean Bundles served with fresh gluten free tortillas
This is a fun meal.  Its like a sandwich and a salad!   We like the bean mixture in the romaine lettuce and we also like wrapping the entire lettuce bundle in a tortilla!  It is certainly fun and yummy which ever way you eat it!  If you aren’t a lover of romaine you can certainly use the bean mixture and wrap it in your homemade tortillas!  Have fun with this meal!  Make it your own!
FridayChickpea Cucumber Sandwiches served with fresh fruit
Happy FRIDAY!  We made it through another week!  To keep with our Simple Fridays theme, I want to tell you about these awesome Chickpea Cucumber Sandwiches!  About this time of year my garden is thriving with cucumbers!  This is a great way to use some!  Be sure to pair your sandwich with some fresh fruit!  This week we are having Koru apples with our sammys!  Sliced apples are always a great crisp treat to add to any meal!  This meal is quite portable, you might think of surprising your family and having a picnic dinner in your backyard!
