Whats Cooking? 7/16/12


Hello from Vegetarian Mamma! We are happy to have you here again this week! As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable!  For example, if a recipe calls for Vegan Cheese, you can sub that out for Dairy Cheese.  Not a vegetarian? That’s okay, feel free to add in a cup of diced chicken/turkey to a meal.  Recipes that taste good, are simple to make and can be adapted to everyone’s eating needs are what we strive for!
**Remember this menu plan is just that…a plan.  If it works better for your schedule feel free to move the meals around to different days!  Have fun, make it your own!

LET’S TAKE A LOOK AT THIS WEEK’S DINNER MENU:

Have you ever tried quinoa?  As a vegetarian, I love that its a complete protein!  This dish is powered with some cumin flavored quinoa alongside fresh avocado!  The two compliment each other perfectly! For your cookies you can cut into fun shapes or just have fun circle cookies!  Be sure to store in an airtight container so you can enjoy all week long!

I always love breakfast night!  Its yummy food with a twist!  I found a perfect banana muffin recipe for you!  Get out that Better Batter All Purpose Flour and you’ll be set!  Remember that if the recipe you are following calls for xatham gum, you can omit that when using Better Batter!  I am pairing the declious muffins with some easy overnight granola!  What is better than food that fixes itself, overnight?  The granola stores well in an airtight container!  Serve it over some yogurt.
Who loves soup night?  Me, I do!  Soup is an easy meal to prepare.  This chowder can be made ahead of time and reheated when you are ready.  I have paired this soup with Naomi’s famous Pakerhouse Rolls!  These rolls freeze and reheat well!
Let your tastebuds take a trip to the southwest with this bean dish!  If you are a fan of southwest food, you’ll love the pairing of these deeply flavorful beans and cornbread.
Its Friday, Friday, Friday!! In keeping with our simple Friday theme, we’d like to introduce you to Broccoli and Toast!   This simple dish is less than 5 ingredients but the taste is HUGE! We are pairing it with a fun fruit and spinach salad!
