What’s Cooking? 5/6/13


Welcome to  Vegetarian Mamma‘s What’s Cooking! Hope that you enjoyed the first week of May! We are busy preparing for our little guy turning 3 in a couple of weeks!

As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!

 

LET’S TAKE A LOOK AT THIS WEEK’S DINNER MENU…

This is an easy Monday night meal!  The nuggets are quick and tasty and just for tonight you some frozen gluten free french fries!  Keep your night simple! :)  We love to bake them!

 

TuesdayEasy Breakfast Casserole

Its breakfast for dinner night at our house!  We love this easy breakfast casserole!  We love to use it for easy weekend mornings as well!


WednesdayChickpea and Broccoli Soup with and fresh bread

This soup is simple to make and has fantastic flavor! There won’t be many leftovers tonight! Be sure to serve with fresh homemade bread!

ThursdayLeek and Ricotta Stuffed Shells served with brownies in a bowl for dessert
Be prepared for the most awesome shells you have had! Have you had GF stuffed shells yet? YUM!
FridayCreamy Mushroom and Rice Soup served with rolls
Happy Friday!  Its mushroom time! Whether you are out searching for mushrooms or buying them at the store, its  a great time of year for them!
