Welcome to Vegetarian Mamma‘s What’s Cooking! I survived my youngest turning 3 this weekend. Seriously, where does that time go! I made a triple batch of the Better Batter Chocolate Cupcakes! They were a HIT, as always! I love it when I tell people they are gluten free, dairy free, peanut/tree nut free! We will be enjoying these all week! (I made extra!)

Tuesday –Strawberry Corn Muffins served with scrambled eggs
Strawberries are coming into season! Nothing is better than a warm strawberry muffin! These muffins have fresh corn in them! Its a wonderful treat! Serve your muffins with some scrambled eggs.
I am a big fan of chili no matter what the temperature is outside. However, in the spring and fall when its still a touch cool outside, I feel chili is at its best!
