What’s Cooking? 5/13/13

Welcome to  Vegetarian Mamma‘s What’s Cooking! Hope that your weekend was wonderful! I am really struggling with some seasonal allergies this weekend :(  Come on spring, let’s move to summer!

As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!



I really enjoy cooking with orzo and creating dishes with it!  We are pairing it with carrot cake.  Be sure to ration the cake so you can enjoy it all week long!

Tuesday Spinach and Black Bean Skillet served with toast

This is one of my favorite quick meals.  Its yummy and easy to make.  You probably have most of the items on hand! Be sure to serve with some gluten free toast.

WednesdayQuinoa Chili with rolls

Its the middle of the week and we are celebrating with some quinoa chili and homemade rolls!

We are starting our easy weekend eating a little early! Let’s kick off the weekend on Thursday this week :)  Enjoy your pizza!
Friday– Grilled Cheese with Corn and Black Bean Potato Bake
Happy Friday!  Use your homemade gluten free bread (which you made using Better Batter) to make a grilled cheese.  Pair it with this easy potato bake casserole! Do you have any carrot cake left? :)
