What’s Cooking? 4/8/13

Welcome to  Vegetarian Mamma‘s What’s Cooking!

As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!



I think this is my way of trying to get that warm weather to HURRY up and get here to Ohio! :)  This week we are supposed to get some warmer temps, we shall see!  Regardless, I’ll have this dish which will make me think of summer!


TuesdayScrambled Egg Whites with Toast

I love breakfast for dinner night!  Tonight, we are are keeping it lighter by using only egg whites in our brinner dish!  Be sure to make some yummy homemade bread using your Better Batter flour!

WednesdayCreamy Corn Salsa Soup with cornbread

This soup is dreamy!  Its creamy and has a rich taste of corn and salsa!  Make some fresh cornbread to dip into this soup and you are all set!

Love chickpeas? Love Quinoa? Love Spinach? Well this recipe is for you!   Get out your Better Batter Cake mix for some awesome cookies!
This dish has LOTS of flavor! I have made this dish many many times and its a family favorite! I think it will quickly become one of your favorites too!
