What’s Cooking? 4/29/13

Welcome to  Vegetarian Mamma‘s What’s Cooking! Its almost May!  The summer will be here before we know it!

As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!



This is a fun dish that looks alot harder to make than it is!  You’ll enjoy these awesome puffs for dinner!  So fun to eat! My kids loved them!


TuesdayScrambled Eggs with veggies and toast

Its breakfast for dinner night at our house!  How about yours?  We are having a simple scrambled egg dish with some yummy veggies and of course some great toast made from homemade bread!

WednesdayPumpkin Pasta Skillet served with garlic bread

I’ve had another request for garlic bread again this week so we will be enjoying that again!  YUM!  We are pairing it with an easy pumpkin pasta skillet!  I love pumpkin!

We are kicking the weekend off early with pizza night!  Try this awesome BBQ pineapple pizza but use the great Better Batter pizza dough recipe! YUM!
Happy Friday!  Who is ready for a simple meal?  I know on Fridays we like to slow down a bit and relax!  Pair this easy sandwich with a fresh veggie or fruit salad!  Enjoy the weekend!
