What’s Cooking? 4/15/13

Welcome to  Vegetarian Mamma‘s What’s Cooking! I am so excited for this week!  I am gearing up to head to the Gluten Free Allergen Free Expo in Chicago next week!  I am on the official blogging team for this event! You can catch up with me in the blogger/author area!  I’d love to meet you!

As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!



We are kicking off the week with this awesome rainbow chili!  We made it last month in the midst of a huge snow storm!  It warmed our bodies!  You will enjoy this yummy dish!

TuesdayBlack Bean Tomato Egg Burrito

Its Breakfast for Dinner night! YUM!  Your family will be begging you for more with these easy and delicious breakfast burritos.  Since the tortilla is the star of this dish, try your hand at making your own!

WednesdayVeggie Noodle Soup served with rolls

Ah, its soup night! This is a very easy soup and your family will love dipping these homemade rolls into the soup! YUMMO!

ThursdaySingapore Fried Noodles served with mint cookies
Your tastebuds are in for a treat with these fried noodles!     Get out your Better Batter Flour for some awesome cookies!
FridayBroiled Veggies
This is an easy Friday dish!  You can serve these veggies over homemade bread or homemade tortillas!  The choice is yours!  Be sure to serve some fresh fruit with your meal.
