What’s Cooking? 4/1/13

Welcome to  Vegetarian Mamma‘s What’s Cooking and welcome to April!  Spring is in full swing!  No April Fools jokes for you today! We’ve got a great menu planned!

As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!



I have lots of favorite dishes and this one of them!  I usually make a double batch, it tastes so good!  We LOVE to eat this for leftovers! The flavor of this chickpea dish is subtle yet powerful in the same bite!

TuesdayAvocado Egg Tortilla Pizza

Its breakfast for dinner night! However, this dish is very flexible.  You can make it for breakfast, lunch, dinner or even a snack!  Its great without the egg as well, if you want to make the dish Vegan.

WednesdaySimple Chili with cornbread

Are you ready for another simple dinner night?  This is a chili with great taste and its easy to make! Serve with a side of cornbread and you are set!

I love pasta night at our house! Its always a family favorite!  Get your favorite gluten free pasta and your Better Batter flour ready for this tasty recipe!
Keeping with our easy and yummy Friday theme we are going to serve these awesome Sweet Potato and Black Bean Burgers! These little guys are yummy! You will enjoy the slaw that tops off these delicious burgers!
