What’s Cooking? 3/4/13

Thanks for dropping by another edition of  Vegetarian Mamma‘s What’s Cooking!  Glad you are joining us this week!

As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!



MondayMini Corn Dogs with baked french fries

Corndogs are something that I really miss.  They are hard to find vegetarian and hard to find gluten free.  So we used our tofu pups and made our own!  We love serving these with baked french fries! You pick your favorite brand of fries, but be sure to read the ingredient labels for hidden gluten!

TuesdayPerfect Black Bean Burgers served on homemade GF buns

These burgers are not only gluten free, but tasty and beautiful!  I love the colorful slaw on these burgers!  They will taste fantastic after you whip up some awesome homemade gluten free buns!

WednesdayDairy, Soy and Gluten Free Macaroni and Cheese

You will love this dairy free and soy free Mac!  It is so easy and SO yummy!  Be sure to sub in Better Batter Flour instead of rice flour! Plan accordingly, its so good you won’t have many leftovers!

I LOVE these mini tots!  The picture in my post shows chunked zucchini, but I would highly recommend shredding it.  It will help keep your tots together.  Regardless, they taste great!  Serve with tangy black bean salad! This salad keeps well! You can make extra and enjoy it for lunch tomorrow!
FridayTwice Baked Potato Casserole served with grilled cheese made on  Naomi’s Favorite White Bread
This is a cheesy meal tonight!  You can use dairy or non-dairy cheese.  Its simple and yummy! Enjoy your Friday!
