What’s Cooking? 3/25/13

Welcome to  Vegetarian Mamma‘s What’s Cooking!  I hope that you are enjoying the weather you have! I have blogging friends who are going to pick strawberries and I have friends who are buried under a foot of snow!  Its such a wide spread of weather this time of year!

As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!



This is a very yummy dish.  It is an easy dish but can take a little bit of time if you don’t have a fryer or use a small pot to fry the cauliflower.  We typically don’t eat alot of fried food, but every now and again you need to go for it! YUM!

TuesdayBlueberry Corn Muffins served with scrambled eggs

I LOVE breakfast for dinner night!  This muffin gives a great spin to a traditional muffin with the addition of fresh corn kernels!  Serve with some freshly scrambled eggs to complete your meal!

WednesdayShredded Jerk Jackfruit Tacos with homemade Tortillas

This dinner is sure to get your taste buds rocking! Have you tried jackfruit before?  If not…you should!  Be sure to make homemade tortillas for this recipe!  They are amazing!

Believe it or not…cauliflower and sweet potatoes are a beautiful pair!  This combo makes a comforting soup to warm your soul on a chilly spring day!
Happy Friday!  Any night is a great night when there is pizza on the table!  Pizza is a favorite of my family!  We loved adding arugula to this pizza to make it a little “greener” on the veggie side!
