What’s Cooking? 3/18/13

Welcome to  Vegetarian Mamma‘s What’s Cooking!   Its been pretty crazy busy around my house lately!  I am looking forward to some comfort food this week!  I love the potato corn soup and cauliflower pasta on the menu this week!  YUM!

As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!



This is a fantastic dish that works as dinner or a brunch! YUM.  Whip up a batch of these “Mrs. Fields Cookies” using your Better Batter flour!

TuesdayPumpkin Chocolate Chips Bites served with fruit

Its breakfast night!!  Yay, its our favorite night of the week!  We took our favorite muffin recipe and made it into bites! YUM!

WednesdayPotato Corn Soup served with rolls or crackers

Ah, this is such a comfort food for me! Even though we are nearing spring, we are still have plenty of cool days around here!  I love sitting down to a hot bowl of this soup!

ThursdayCauliflower Pasta
We are all about pasta tonight!  Pasta with veggies, that is!  This is a great pasta dish and it is topped off with some smoked paprika.
FridayPizza Rolls
Happy Friday!  This recipe is a little more work, than our typical Friday meal, but you’ll love it!  Make a double batch for your freezer!  You’ll thank me later!  Enjoy your weekend :)
