What’s Cooking? 2/25/13


We at Vegetarian Mamma are so happy that you stopped by this week to check out our menu plan! We have some yummy and easy meals this week!  With all this chilly weather we are starting to get a bit stir crazy; how about you?

As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!

 

LET’S TAKE A LOOK AT THIS WEEK’S DINNER MENU…

MondayCheesy Broccoli Casserole served with a simple salad

I am a big fan of casserole dishes as you probably know! I just like to be able to throw ingredients together and let them bake together while I play with the kids just a little more. :)

 

My family loves to eat breakfast for dinner and we try to have it once a week.  We loved this easy Spinach Scrambled Egg dinner!  It paired wonderfully with some homemade gluten free bread, which we popped into the toaster!

Wednesday- Vegetable Quinoa Soup served with rolls

This is a VERY easy soup that can be made ahead of time and reheated, if your night is too busy to make it fresh! However, if you make it fresh it won’t take you long at all! Serve with some yummy rolls!

Thursday- Shells and Cheese served with sugar cookies
This shells and cheese recipe is a very rich macaroni. I think that you’ll be in love with the taste! We are pairing the mac with some yummy sugar cookies.  You can choose to roll out the dough to make cut out cookies or make free form ones! You pick the level of difficulty! Its your week, you decide how much time you want to spend!
I am more of a bread girl than a bun girl.  I like to enjoy my sammys open faced.  So tonight we are eating these savory burgers open faced on homemade gluten free white bread! YUM!
