Hello from Vegetarian Mamma! I hope that your Valentine week was a great one! This week we are keeping it simple to help recover from all the sweets we had last week!
As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer! We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!
LET’S TAKE A LOOK AT THIS WEEK’S DINNER MENU…
This is a favorite dish of our family. I like that we can dress this dish with whatever sauce pleases us, whether its sweet/sour, soy sauce or teriyaki. YUM. It makes great leftovers as well!
Pretty much if I present anything in a cookie shape my kids will eat it
I mean who doesn’t like to eat “cookies” for their meal? These cookies can be adapted to fit your tastes and they freeze great! I like to make a double batch and store them in my freezer. I usually put 6 cookies in a quart size baggy. It makes it easy to pop them out of the freezer and serve! YUM!
Wednesday– Sweet Not Spicy Chili with cornbread
This chili has some amazing ingredients in it. The taste flavors are yummy! I love the addition of cornbread with any chili!
These spinach puffs may look difficult but they are not. They are very manageable. They also reheat great. I love to serve them with mashed potatoes! YUM, the perfect comfort food!
