What’s Cooking? 2/11/13

Hello  from Vegetarian Mamma! Its Valentines week!  Be sure to tell the ones you love, just how special they are this week!

As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!



Quesadillas are so yummy and so easy to make!  My family loves it when its dilla night!  Be sure to serve these dillas with some salsa for dipping!
TuesdayLemon Poppy Seed Muffins with scrambled eggs
This is a very simple meal and the muffins can be prepared ahead of time.  They freeze very well!  So while you are baking, bake a double batch and freeze half for another meal!

WednesdayBroccoli and Cheese Soup

This soup will remind you of the warm yummy soup that Panera sells!  The best part is this soup is Gluten Free!  We pulled this recipe straight from the Better Batter recipe bank!

ThursdayBaked Bean Casserole with corn and fresh fruit
Happy Valentines Day!  Tonight we are celebrating at home with our little family!  We are enjoying a yummy and filling baked been casserole!  We love to serve this meal with corn and fresh fruit!
Its Friday!  We love to celebrate the start of the weekend with pizza.  Tonight we will be having 3 Cheese Pesto and Tomato Pizza.  Be sure to use your Better Batter Flour to make your own homemade pizza crust.  Its easy when you use this recipe.
