Hello from Vegetarian Mamma and welcome to our FIRST menu plan of 2013!! WOW, I am excited to see what this year brings for my family! We have set a few goals for ourselves to help keep us on a straight path! How about you? Did you set any family goals this year?
As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer! We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!
LET’S TAKE A LOOK AT THIS WEEK’S DINNER MENU…
A special birthday wish for my husband today! I won’t reveal his age (LOL) but do want to give him a “Birthday Shout Out!” In honor of him we will be having one of his favorites for dinner! My hubs is a HUGE fan of Eggplant Parmesan. We will be taking on a baked recipe from Gluten Free on a Shoestring!
Its Tuesday and that means its Breakfast for Dinner tonight! Tonight we will be enjoying some Chocolate Chip Style Corn Cakes! We keeping it sweet and extending our birthday celebration!
Wednesday– Grilled Cheese with Mashed Potato Casserole
Get out your Better Batter Flour to make some yummy homemade bread! We are going to have grilled cheese tonight! Along with the grilled cheese we are having mashed potato casserole! I promise, these potatoes are YUMMO!
I love love these little muffins! Well they are really… pasta…well mac and cheese…just in muffin form! If you are not into the dairyfree goodness, feel free to use dairy cheese!
Keeping it simple for Friday we are having pizza! But instead of cheese this week, we are kicking it up a notch with Better Batter’s Spinach and Artichoke recipe! YUM!
