Hello from Vegetarian Mamma! January is coming to a close! How’s the snow in your area? This seems to be the time of year that the snow in Ohio really picks up! My little boys LOVE to play in the snow!
As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer! We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!
LET’S TAKE A LOOK AT THIS WEEK’S DINNER MENU…
We are starting this week out right with one of my favorite dishes! I love the combination of eggs, spinach and chickpeas. I won’t lie, when I first read the recipe it had to grow on me, but wow…the flavors are amazing! And of course, we are making some cookies to eat throughout the week! Got to love a sweet treat!

Wednesday– Baked Mac and Cheese with Okra
This is a fun Mac and Cheese dish with a splash of color! The green okra really pops against the cheesy mac! You can make this dish dairy filled or dairy free! Its all up to you!
I love roasted anything; okay will most “anything”
This awesome soup will snap you in with the roasted carrot flavor! Pair them with some yummy Parmesan Snack Crackers and you’ll be in food heaven! YUM!
Its Friday! We love to keep it simple on Fridays! This dish is simple to make but the taste is beyond simple! My husband and I ate a double batch of this recipe! No lie! Well, maybe I shouldn’t admit that in public! LOL It is yummy!
