Hello from Vegetarian Mamma and welcome to another addition of What’s Cooking! I said that in my announcer voice….could you hear it when you read it to yourself? Its hard to believe that its New Years Eve! We are gearing up for all the wonderful things that will happen in 2013!
As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer! We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!
LET’S TAKE A LOOK AT THIS WEEK’S DINNER MENU…
– Happy New Years Eve, Its Taco Bar
Tonight we are keeping it simple because its NYE! We are making some yummy soft tacos
! We will have a bar of toppings available such as: black beans, salsa, spinach (yes we prefer over lettuce), cheese, sour cream and avocado!
We love to nibble on snacks while we watch all the NYE celebrations on tv. Here are a few of the snacks that we’ll be munching on!
Eat More Veggies Dip with LOTS of fresh veggies AND French Onion Dip served with GF chips
Welcome to 2013! To help usher in the New Year, we are making some yummy and easy mini pumpkin donuts. This recipe does require a mini donut pan; if you don’t own one you can make them into muffins. Serve with fresh fruit and scrambled eggs.
Wednesday- Black and Tan Bean Soup served with homemade “cheeze- its”
I just love that name, if it makes you think back to NYE too much we won’t go there This time the black and tan are beans, not the drink. This is a great soup, that I know you’ll love!
Using your Better Batter flour whip up a batch of fresh gnoochi. In a medium skillet heat 1 t of olive oil and saute 2 handfuls of fresh spinach! Toss with gnoochi and enjoy!
In keeping with our tasty but simple Friday menu we are having some yummy homemade tortillas with broiled peppers and onions! Your tummy will be happy, I promise!
