Hello from Vegetarian Mamma! I can’t believe how fast December is going already! My oldest has two days of preschool this week then off for 2.5 weeks! Its a long break this year and I know that we’ll have so much fun!
As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer! We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!

Today I am excited to share this roasted acorn squash recipe with you! It is from Beard and Bonnet, which is one of my many go-to Gluten Free sites! You will love this dish! Like many Mondays, we are starting off with some cookies! These cookies are unique because you will be using a Better Batter cake mix to make them! Be sure to ration the cookies so you can enjoy them all week!
Its Tuesday and that means its Breakfast for Dinner tonight! Use your Better Batter flour to make some easy pancakes for your family! Be sure to include lots of fresh fruit on the side!
Wednesday– Cheeseburger Soup
Don’t let this name fool you, there is no burger involved! Its all beans! This soup is full or flavor and VERY hearty! If you do have a meat lover in the family, you can most certainly adapt it to your needs and tastes! I know that you’ll love this soup!

Welcome back Friday! Keeping it simple and relaxed we are going to make some Potato Lentil Kachoris. Yes, it is a touch more involved then we normally do on Fridays, however I think that once you sit down to relax and enjoy these little guys you’ll be in love!
