Hello from Vegetarian Mamma! Is it beginning to look like winter at your house? For us here in central Ohio, we are just getting rain. Our snow doesn’t seem to creep in until late January. Its certainly a busy time of year. Let’s create some yummy meals this week to keep our family and our bellies happy!
As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer! We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!
LET’S TAKE A LOOK AT THIS WEEK’S DINNER MENU…
This is a great dish that can be eaten all year long, however I like to eat it in the Winter as the taste reminds me of a warm sunny place. I know food can do crazy things; this dish just makes me happy! The jerk sauce can be served on chicken as well. The banana chip cookies are our sweet treat for the week! Pace yourself, so you still have some on Friday!
Its Tuesday and that means its Breakfast for Dinner tonight! Use your Better Batter flour to whip up some bread! Serve your bread topped with this chocolate spread! I love that its a nut free alternative for those of us with nut allergies! Top off the meal with some scrambled eggs!
Wednesday– Simple Vegetable Soup served with warm rolls
As you know, I love to enjoy soup during the middle of the week! Its always easy to prepare and makes for a great lunch the next day! Tonight we will be enjoying a simple veggie soup!
Honestly, pasta is one of my favorites! I just love the stuff! There is so many fun things you can do with pasta! For this year, I used some fresh corn that I had put up for the winter in my freezer! It paired great with avocado! Why not try your hand at making your own pasta

Yeah for Friday! Get out your Better Batter Flour because tonight we are going to make some deep dish pizza and we are going to do it Chicago Style via Gluten Free On a Shoestring! I think its the former “Illinois Girl” in me that gets SO excited when I think about Deep Dish Pizza! Feel free to adjust the toppings!
