What’s Cooking? 11/26/12

Hello  from Vegetarian Mamma!  Did you survive Thanksgiving?  I did!  Phew, I ate SO much good food! YUMMY!  What was your favorite dish that you made?  I am already thinking ahead to Christmas dinner!

As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!



Today is celebration Monday! Take some time after you finish your meal to sit with your loved ones and talk.  Talk about the things that make you happy!  Celebrate each other!
TuesdayPumpkin Pancakes served with fresh fruit
I just can’t get enough pumpkin!  I am sure you already know that with all the pumpkin recipes that I share!  Enjoy this simple but tasty, breakfast for dinner!

WednesdayButternut Squash Chili served with warm potato rolls or grilled cheese

I think Wednesdays might be my favorite meal night of the week!  I always enjoy having soup or chili!  I love the warmth that it provides!  Just warms my little ol’ soul right up! :)


This isn’t your mom’s mac and cheese!  This dish has a twist!  We threw in some edamame to add some color, flavor and protein! YUMMO!
Friday– Grilled Cheese with Sweet Potatoes with Crunchy Oat Topping
Yay, Friday’s here!  WHOOT!  Can you tell I like Fridays! :)  I hope that your week was a great one. We are keeping it simple tonight with grilled cheese and some oven baked sweet potatoes!
