What’s Cooking? 10/8/12

October is probably my favorite month of the year!  I love fall and all that it brings!  This week I get to celebrate my 11th wedding anniversary! I met my husband when I was only 5 years old!  We grew up as neighbors!  I grew up as the girl next door!  LOL  So we will be enjoying our anniversary this week!

I have been busy over at Vegetarian Mamma with our Gluten Free Fridays.  I am not sure if you’ve had a chance to see it, but I’d recommend stopping over for a look. As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!


Oh Monday!  Its the start of another work week for many of us!  Tonight for dinner we are going to kick it salsa style!  We are taking a very fun, colorful and tasty salsa and wrapping it up in a homemade tortilla!  Have a little fiesta tonight!
TuesdayBlueberry Breakfast Cakes served with maple syrup
These Blueberry Breakfast Cakes are a huge hit in my house and also a fan favorite from my blog!  These little cakes are sweet enough to serve without syrup if you like!  They also freeze well.
Last week we enjoyed some yummy tomato soup, this week we are switching over to potatoes!  This recipe tastes great at any time of the year, however in the fall it certainly warms your body!  I also love this soup when I am feeling a cold coming on!
ThursdaySpag O’s with grilled cheese
Who doesn’t love spag O’s from their childhood?  I love those things!  When I stumbled upon this recipe, I knew that I needed to adapt it for my boys! The only thing I changed from the recipe was I used Gluten Free pasta! I serve this up with a side of buttered bread. I remember one of the best things about eating Spag O’s as a child was the buttered bread!  I loved dipping the soft bread into the left over tomato sauce!  Be sure to make some yummy homemade bread using your Better Batter flour!

Happy Friday!  Let’s keep dinner simple tonight so we have more time to relax after dinner!  Less prep, less mess equals more relax time!  Tonight we are serving up a simple yet flavor packed sandwich!
