What’s Cooking? 10/29/12

Can you believe that we are nearing the end of October? Where does that time go? If you are out and about this week with your little/big ones trick or treating, be sure to read the labels extra careful to make sure the candies are gluten free. If you are looking for a glutenfree candy list, you can click here.  We will be doing our trick or treating a little different this year.  I have prepackaged several goody bags at our close neighbors houses.  The goody bags are brimming full of snacks are that free of peanuts, tree nuts, dairy, soy, gluten, artificial colors and artificial flavors!

As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!


Monday –Green Stir Fry served with egg rolls
This is a fun and simple meal that you can stir fry in a wok or steam in your steamer!  Its flexible!  So do whatever works for you!  I’d pair this rice dish with some Bragg’s Amino Sauce or some homemade Sweet and Sour Sauce.  I’d reccommend Nicole Hunn’s SS sauce!  Serve this dish with a side of egg rolls!  Don’t let the name fool you; its simple to make your own egg rolls at home!
Tuesday Easy Pumpkin Bars with scrambled eggs
These little bars are easy and you can make them any time during the week and save them for dinner!  Make this a complete meal by serving them with scrambled eggs and fresh fruit!
WednesdayPotato Leek Soup served with fresh rolls
This is perfect for a chilly day!  Is it chilly where you are?  If not, you’ll still enjoy this!  I love this soup!  Be sure to make some yummy rolls to dip into your soup!
ThursdayTaco Casserole
We are keeping it easy this Thursday with a casserole!  I just love casseroles that can feed the entire family!  This dish combines all the flavors of tacos but in casserole form!  Its simple enough to adapt to meet your needs as a vegan or meat eater!
Whose ready for burger night….vegetarian style?  This is a great recipe that meat eaters and vegetarians will love! I have paired it with a side of honey balsamic carrots! I’ve also included a dessert to help welcome in the weekend!  Who doesn’t love chocolate chip and pumpkin?  YUMMO!
