Happy MONDAY! I hope that you are starting your week with a smile! I know that I am! We’ve got some fun things in store for our menu this week!
As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer! We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!

I really like this beans and dogs dish because it can be appealing to vegetarians and meat eaters! We of course used our tofu pups (gluten free) in this dish but you are welcome to use your favorite ‘dogs’. I am pairing this simple dish with a slice of buttered gluten free bread! Get out your flour and make some delicious homemade gluten free bread

Ah, I love sitting down to Wednesday dinners because I know that they always warm my soul! I love to get through this mid week day with a bowl of soup or chili. This week, we are going to have some tasty chunky corn soup! YUM! Be sure to make some rolls to dip in your soup!

Just as the recipe names states, this dish is easy! Not only is it easy to make but its easy to customize! You can easily add in more veggies to the lasagna rolls.
