What’s Cooking? 10/22/12

Happy MONDAY!  I hope that you are starting your week with a smile!  I know that I am! We’ve got some fun things in store for our menu this week!

As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!


Monday – Beans and Dogs served with buttered bread slices
I really like this beans and dogs dish because it can be appealing to vegetarians and meat eaters!  We of course used our tofu pups (gluten free) in this dish but you are welcome to use your favorite ‘dogs’. I am pairing this simple dish with a slice of buttered gluten free bread!  Get out your flour and make some delicious homemade gluten free bread! Sometimes simple just tastes better!
Tuesday Pumpkin French Toast served with maple syrup
Who is ready for some breakfast for dinner?  I am!  How does Pumpkin French Toast sound?  YUM…I think it sounds like a winner to me!  This dish is very easy and full of flavor! If you made some bread for Mondays meal you should have plenty left for this dish!
WednesdayChunky Corn Soup served with fresh rolls
Ah, I love sitting down to Wednesday dinners because I know that they always warm my soul!  I love to get through this mid week day with a bowl of soup or chili.  This week, we are going to have some tasty chunky corn soup!  YUM!  Be sure to make some rolls to dip in your soup!
ThursdayEasy Lasagna Rolls served with Better Batter Brownies for dessert
Just as the recipe names states, this dish is easy!  Not only is it easy to make but its easy to customize! You can easily add in more veggies to the lasagna rolls.
FridaySmashed Avocado Sandwiches served with some fruit fresh
Happy Friday! We are keeping it simple with smashed avocado sammys tonight!  YUM!  Don’t forget to season with a little salt and pepper!
