What’s Cooking? 10/1/12


Fall has officially arrived! I am really enjoy this time of year!  Its fun to create dishes that warm the soul!  What is your favorite fall dish? I’d have to say that one of my favorites is tomato soup!  Nothing beats tomato soup on a cold day!

As a quick reminder, we like to keep our meals simple, often times you can make them ahead and even store some meals in the freezer!  We focus on recipes that are adaptable; for vegans, vegetarians and meat lovers alike!

LET’S TAKE A LOOK AT THIS WEEK’S DINNER MENU:

Let’s start this week off with a bang!  We are bring some serious flavor profiles to the table tonight with our Quinoa Tabbouleh.  It makes a lot so you’ll be happy to have left overs for your Tuesday lunch!  The tempura style zucchini is very easy!  You can also sub in any vegetable that you like!  The recipe works well with asparagus, onions or bell peppers!  Don’t forget to add in your favorite dipping sauce!
Tuesday Chocolate Glazed Doughnut Holes served with scrambled eggs and fresh fruit
Its breakfast for dinner, tonight!  And you are in for a SWEET treat!  Who doesn’t like to eat chocolate for dinner?  Okay, maybe some people :)  But tonight let’s go all out!  Be sure to serve your chocolate doughnut holes with scrambled eggs and fresh fruit to give your dinner some balance!
WednesdayTomato Soup and crescent rolls Let’s get through the middle of the week with some soul warming tomato soup!  This soup has a unique taste with the addition of red onion and maple syrup!  Don’t forget the rolls to dunk in your soup!
This is a fun fun dish or shall I say muffin? :)  My kids and husband loved this!  It was a neat way to serve this mac!  This mac also packs some veggie power in the form of acorn squash, but SHHHH! don’t tell!
Keeping it simple again this Friday, we are having easy polenta pizzas.  This is a meal that virtually you can always have on hand.  You need polenta, sauce and cheese!  You can also add more topping if you wish!  Its easy to adapt to fit your tastes! For dessert, get out your Better Batter flour to make some brownie bites.  Sub in Better Batter Gluten Free flour and keep the rest of the recipe, as is!
