Week of August 20th


Hi!  I am Kristy with Mommy Hates Cooking and new to writing Menu Plans here with Better Batter; however, I am most certainly not new to using Better Batter!  It is my flour of choice since going gluten free several months ago.  The road to discovering that gluten did not like me was a long process as it is with most, but as soon as I said so long to gluten suddenly my body started to function the way it is supposed to.  After initially being overwhelmed because I thought I would no longer be able to enjoy my favorite pastries, I found Better Batter.

Then, I quickly realized that I could easily make all my favorite recipes with a simple switch of flour!  Now, months down the road I have become very knowledgeable on gluten free cooking and use Better Batter in all of my recipes that call for flour.  I am looking forward to this journey sharing menu plans with each of you throughout the month!

I’m not sure about each of you, but where I live in the dusty plains of Oklahoma it is still extremely hot!  That means that I rarely want to turn on my oven, which calls for lots of slow cooker and stove top recipes; however, there are a few sweet treats I can’t live without turning the oven on for.  Let’s get on to this week’s recipes!

Monday– Enjoy a delightful treat with a Summer Strawberry Salad!  This is pictured above and combines some of the best fruits for the summer season, topped with your favorite light dressing.

Tuesday– On Tuesday it’s time to use some of your pantry herbs to make Slow Cooker Rosemary Chicken and Potatoes.  I promise when you walk in from work in the evening your house will smell wonderful!

Wednesday– On Wednesday enjoy some Sloppy Joe Spuds, but save room for Baked Apple Crisp for dessert!  Using Better Batter in this Baked Apple Crisp turned out perfectly and made one of my gluten filled favorites, gluten free!

Thursday–  How about Breakfast for Dinner?  Combine some of your favorite morning breakfast items into this great Sausage Hash!  If you want to add a little bit more to go with it pair it with Blueberry Waffles using Better Batter All Purpose Gluten Free Flour.

Friday–  Friday let’s go with a dish that will be enjoyed by all plus it makes enough for seconds and maybe thirds, Mexican Meatloaf!  This one is simple to make gluten free using the gluten free cream soups, homemade cream soups are simple and work perfectly.

Welcome, Kristy! I have to make the Summer Salad and Mexican Meatloaf for my kiddos this weekend. (gorgeous pics!) And that Apple Crisp looks amazing. Putting that on my list too. :) I gotta run over and check out the yumminess on your blog. Can’t wait! Thanks for sharing and have an awesome week!
