This Week’s Good Eats- Week of October 8th


It’s already Monday which means it’s time to menu plan for the week!  Among planning these menus, I’m also getting ready to teach a gluten free cooking class in my area, so I have been updating my site with lots of gluten free recipes over in my recipe index!  I suggest checking it out for some more ideas on recipes you may want to try.

I’m learning as I plan for this class that many people who are new to gluten free really want to know how to enjoy some of their breaded favorites but adapt them to gluten free.  I thought I would share a few recipes that meet that criteria today as well!

Monday–  On Monday, I thought we would try out the Baked Eggplant Parmesan.  This is one of my favorites and is easily adaptable to a gluten free meal with the use of gluten free bread crumbs!

Tuesday–  Tuesday, let’s enjoy some Oven Fried Chicken complete with your favorite sides!  I love to serve mine with Roasted Okra.  As always with this meal a dinner roll is always nice, try out these Parkerhouse Dinner Rolls!

Wednesday–  Wednesday is the perfect day to let the slow cooker do most of the work with this Slow Cooker Minestrone Soup!  Just fix your soup before you leave in the morning and come home to a delicious dinner!

Thursday–  Thursday is a good day to whip up a batch of Mini Zucchini Muffins.  These are great for snacks or for a breakfast treat!  Next up for dinner enjoy this family favorite, Cheeseburger Pie!

Friday–  Get festive on Friday and make Pumpkin Peppers using the Mexican Stuffed Peppers recipe.  Such a cute and fun way to get into the pumpkin season!  Let’s not forget about dessert either, make your favorite Blackberry Cobbler or Baked Apple Crisp!

Yum! Your menu is so seasonal and fresh! Love it! It looks like everything my family would like to eat. Watch out in case we show up at your back door with plates in hand.

Those pumpkin peppers are so fun and tasty looking. Gotta try that and the soup. Have fun teaching. I always have such a blast when doing a class. :)
