This Week’s Good Eats – Week of May 1st

It’s here, MAY!  Can you believe it’s already May?  It’s about to be the unofficial start to summer too.  We have just about 3 weeks or less now left of school and it’s also the last year of preschool for my daughter.  It’s bittersweet to leave her school.  I’ve had both kids there for several years and now we have no more kids to send there and a chapter is closing.  I know that she’s anxious though to start ‘big kid’ school with her brother though.  Every single day that I drop him off at school she begs to go to his school, so I am looking forward to them being at the same place and on the same schedule.

We have a lot of fun planned this summer and a lot of relaxation too!  I’m trying to think of more inexpensive summer ideas to keep us busy, but I think for the most part I plan to spend our summer at the pool as much as possible.  That’s basically what we did last summer and we enjoyed it!

Monday-  Start the week with Sweet and Sour Chicken Skewers.  Then, remember to save this American Flag Cookie Cake for Memorial Day weekend!

Tuesday-  Start the day off with these Peanut Butter & Berry Bars.  Make it a light dinner with this Grilled Chicken Kale Salad.

Wednesday-  Make a simple but delicious meal with this Slow Cooker Ranch Roast.

Thursday-  Tonight enjoy this Eggplant Parmigiana plus a Deep Dish Pizza.

Friday-  It’s a good day for Maple Glazed Ribs paired with Grilled Okra.  Then, it’s time for dessert with this Blueberry Crumb Cobbler.
