This Week’s Good Eats- Week of January 21st

We are getting closer to being done with the first month of 2013!  How is yours going so far?  Are you sticking to some of the goals you made for this year?

I hope menu planning is one of them because it can truly save you so much time and money!  This week on the menu plan we have a variety of tasty meals plus some delicious treats too.

Now, not to waste any time on to planning dinner this week!

Monday–  I think Monday would be a great day for Breakfast for Dinner especially after a long day back to work.  Serve up some bacon along with these tasty Apple Cinnamon Pancakes!

Tuesday– Start Tuesday off by making a batch of the Banana Oat Mini Muffins!  I have been making these frequently to have as snacks and breakfast items throughout the week.  They also freeze well too!  Next up for dinner enjoy this easy Slow Cooker Ham & Yam Casserole!

Wednesday–  Wednesday night enjoy a Fiesta Night complete with Cheesy Chicken Enchiladas!  These are perfect served along side Queso and Chips!

Thursday–  Thursday would be another good night for a Slow Cooker Meal, try out one of my new favorites the Slow Cooker Cranberry Roast!  This dish is an easy pantry style meal that is sure to be a crowd pleaser.  After several hours slow cooking this roast is juicy and tender.

Friday–  Are you having a date night Friday night?  Or even if it is a family dinner, this Chicken Cacciatore will hit the spot!  It is an easy, light dish that taste like you spent hours on it when really it just takes a few short minutes!  Friday night also calls for dessert, enjoy a batch of Mocha Cupcakes!
