The Week’s Good Eats- Week of March 11th

This past week we have been digging our way through our garden as we had a dump truck load of dirt brought in.  All this garden talk is making me get the itch for spring!  We are simply in the prep stages of our garden right now, but with the warm weather it is making it increasingly hard not to start planting.  We have a few things we can plant now; however, Oklahoma has been known for winter storms at the end of March…so we are trying to be patient!

In light of that I have been thinking all week about the recipes I plan to use with our garden crops this year!

A few of the recipes this week include delicious veggies in light of the upcoming gardening season!

Monday- On Monday try one of my new favorites, Turkey Spaghetti Squash Tumble.  This is a one dish wonder of a meal, packed with veggies and protein plus a delightful flavor!

Tuesday-  Tuesday, enjoy Mini Taco Salads with Homemade Chunky Salsa!  Save room for dessert and make a plate of Gluten Free Chocolate Chip Cookies!

Wednesday- Next up, on Wednesday take a break and make these BBQ Chicken Spuds with Slow Cooker BBQ Chicken!

Thursday-  Enjoy breakfast for dinner with these Chocolate Chip Zucchini Waffles perfectly paired with your favorite bacon or sausage!

Friday-  Start with an appetizer on Friday with this Spinach & Artichoke Dip.  Then, finish it off with Ranch Breaded Pork Chops!
