The Week’s Good Eats- Week of July 1st

Veggie Pasta Salad

Now, I have to say it…can you believe it’s July 1st?!  Where is this year going?  I can’t even keep up!

We are enjoying our summer, and I’m still busy trying to come up with fun activities for a preschooler that don’t cause myself and the baby to sweat to death in the heat!  I’m just waiting on those 120+ degree days here in Oklahoma.

That’s the point when I turn into a hermit and stay inside!  It’s smoldering!  That’s when different types of cold salads and sandwiches become the highlight of dinner!

Now on to the menu!


On Monday, I’m whipping up a batch of Veggie Pasta Salad.  This is a great cold salad that can be served along side a gluten free sandwich on those hot summer days!


Tuesday, it’s time to let the slow cooker do some work with this Slow Cooker Hawaiian Chicken!  Then, for dessert enjoy a warm slice of Banana Bread!

Flag Cookie Cake


Now on Wednesday, enjoy a batch of Guacamole Enchiladas!  Then, for dessert get ready for the 4th with this 4th of July Flag Cookie cake!


Happy 4th of July!  Enjoy one of your favorite burgers or a grilled pizza!  I would highly suggest that 4th of July Flag Cookie cake or a batch of S’mores Brownies for dessert!

After a lot of great eats for the 4th of July, enjoy a night off and something light with this Slow Cooker Dill Chicken & Veggies!
