Now, I have to say it…can you believe it’s July 1st?! Where is this year going? I can’t even keep up!
We are enjoying our summer, and I’m still busy trying to come up with fun activities for a preschooler that don’t cause myself and the baby to sweat to death in the heat! I’m just waiting on those 120+ degree days here in Oklahoma.
That’s the point when I turn into a hermit and stay inside! It’s smoldering! That’s when different types of cold salads and sandwiches become the highlight of dinner!
Now on to the menu!
On Monday, I’m whipping up a batch of Veggie Pasta Salad. This is a great cold salad that can be served along side a gluten free sandwich on those hot summer days!
After a lot of great eats for the 4th of July, enjoy a night off and something light with this Slow Cooker Dill Chicken & Veggies!
