The Week’s Good Eats- Week of January 7th

It’s the first full week of the new year!  Have you set any resolutions this year?  Mine is the standard getting back into shape, but that is because I just had a baby!  We are adjusting to life with a newborn again, so we have been using several freezer meals that I prepared before the baby arrived.  That is making my nights of cooking very easy lately!

Let’s get on to this week’s menu!

Monday-  Start the week off with one of my new favorite slow cooker meals, Slow Cooker Chicken Parmesan.  This is great served with gluten free pasta or veggies!

Tuesday-  Enjoy a few Banana Oat Muffins for breakfast then for dinner make a BLT Salad!  The salad makes for an easy dinner night plus a healthy one too!

Wednesday- On Wednesday warm up with a nice bowl of Beef & Veggie Soup.  This is perfectly paired with homemade cornbread.

Thursday- This Easy Grilled Jerk Chicken is sure to be a hit at your dinner table, pair it with some fresh veggies for a healthy meal.

Friday-  End the week with a good ole helping of Shepherd’s Pie!  This is one of my favorite comfort foods!
