The Week’s Good Eats- Week of February 25th


It’s the last week of February, can you believe it?  I sure can’t!  I feel like I just said that about January.  Where is the time going?  I guess many people are glad winter is nearing its end and then spring will be here!  I have to say I’m pretty excited about spring just to get out and get some fresh air!

Plus, it’s gardening season and my husband is in full swing with our garden.  Stay tuned for lots of delicious recipes with fresh veggies this summer!

Let’s get on to this week of good eats!

Monday- 

Start off Monday with this delicious Stone Fruit Salad.  It will make you feel like spring has sprung!

Tuesday-

On Tuesday, make a large batch of Toni’s Tangy Meatballs.  I would also freeze half the batch to have more throughout the next month for dinners!

Wednesday- 

Wednesday, use those leftover meatballs and make a big pot of gluten free spaghetti for an easy pantry style meal!  If you are in a baking mode, then make some Cranberry Orange Muffins for breakfast on Thursday morning.

Thursday- 

On Thursday, make a batch of Slow Cooker Chili then save the leftovers for Friday night!

Friday- 

Using that leftover chili make Slow Cooker Tater Tot Casserole or even Chili Nachos!  Then, whip up a yummy dessert with a batch of Mocha Cupcakes!
