The Week’s Good Eats- Week of February 18th


We are half way through February, can you believe it?  I see spring just around the corner, and I am ready!  We have already started to clear out the yard for our garden, so stay tuned for lots of great recipes this summer with fresh produce.

I will say that I would have loved to have some snow this year, fingers still crossed for that.  We have had a very mild winter here in Oklahoma and the same last year.  That just means we are going to be melting this summer!

Now let’s get on to this week of good eats!

Monday-

Start off the week with these delicious Mexi Stuffed Peppers!  These are perfect for the whole family, plus you can double the recipe and freeze a batch for an easy cooking night in the future too!

Tuesday-

Italian Night on Tuesday with Chicken Alfredo and a batch of garlic bread!  I love this Chicken Alfredo and have been craving it, only I’m having to eat a primarily dairy free diet right now so I get to crave it a little longer!

Wednesday- 

Let’s celebrate that we made it half way and make a batch of Heart Shaped Baked Chocolate Doughnuts!  I know Valentine’s Day was last week but these are great year round…they won’t last long!

Next up for dinner enjoy Jerk Chicken with a side of Oven Roasted Okra!

Thursday-

Thursday it’s time for Ranch Breaded Pork Chops!  These are perfect paired alongside fresh veggies.

Friday-

Make it an easy, family friendly meal on Friday Night with Sausage Hash!  This would be great to make a little extra for breakfast over the weekend!  Of course, you could always whip up a batch of Banana Bread too!
